Helixir Snail private capital company is a Greek snail farm for breeding and fattening of the snails Helix Aspersa Maxima 8−24gr on elevated pens which follows the intensive organic farming of snails.

 

Our company which has been operating since the beginning of 2014 is a member of the Unione Nazionale Elicicoltori (UNE) based in Casoli-Chieti Italia.

 

Our snail farm which has its facilities in Megara, Attica (between Athens and Corinth) enjoys the ideal climatic conditions of the unique Attica Earth with an average temperature between 16−23 degrees Celsius all year round and low humidity.

Professional chefs, who have prepared ready Mediterranean diet meals with our snails as frozen product, certify that because of the diet with vitamins fed daily and the appropriate quality tested water which is a key component of snail fattening, is immediately suitable for cooking (without any other preparation or cleaning and waste of time for the housewife but also for the professional chef).

I'm Elena Hari, as Director of Helixir Snail, in my decision to deal with the primary sector I certainly took into account the nutritional value of snails −identical with lean fish in proteins– as well as the greater use in the field of cosmetology and medicine with snail mucus.

PRESENTATION

A. FARMING METHOD

Helixir Snail in Megara Attica region follows a new Italian method of snail farming with the signature of the Italian Franco Ballone who is also our technical expert.

 

The snail farming on elevated pens has the advantage of intensive farming, with higher yield at harvest of snails even twice a year, as well as saving time in all phases of farm management, since all work is done in an upright position!

The breeding and fattening of snails is done in specially designed panels with quality tested mechanical composition of the soil in order to receive the correct movement of water and air.

 

Special shading nets protect the development cycle of snails that are fed exclusively on a diet with vitamins and grow in a natural environment with plants thus achieved the ideal temperature both in winter and in summer.

 

This means that we follow in the rearing of our snails all necessary rules of expertise and abide by microbiological controls so that the snails are a delicacy safe for consumption.

Investing in a snail farm with elevated pens, such as ours in Megara requires a significant capital and subsequent management of the farm and distribution of your product both abroad and in the local market.

B. DRYING SNAILS

One of the most important phases after the snail harvest is their gradual adaptation to the state of dormancy for their subsequent safe transport to our customer.

 

The snails Helixir Snail after harvest are transported in suitable drawers with screens for ventilation in specially cooled areas with adequate moisture to remove the feces and start safely the drying process.

 

So the snails after the required time for drying are ready for packaging and distribution abroad.

 

Experienced consumers prefer snails with reinforcing lip (closed). These are the most delicious, do not smell and are digested easily.

For the housewife, who no longer has time to cook, she has a wide variety
of dishes of Mediterranean diet with snails as frozen product.

Our goal is to spread internationally the Mediterranean diet as frozen ready meal with snails which is worldwide known as a highly nutritious food, easy to digest, with the lowest amount of fat and calories compared to other meats including lean fish.

A. FRESH PRODUCT

According to international standards the snails Helixir Snail belong in two categories, medium and large according to the size and weight.

Snails are sold alive and moving and with reinforcing lip. They are sold in bulk packs of kilo and half kilo in a plastic container of corresponding capacity. They are kept at temperatures 4 − 6° away from moisture and can be kept in the refrigerator for at least 6 months.

B. FROZEN PRODUCT WITH THE COOK & FREEZE METHOD

1. Ready meal Mediterranean diet

For the housewife, who no longer has time to cook, and professional of food we have a wide variety of dishes of Mediterranean diet with snails as frozen product (in packs of 150gr and 250gr that last in the freezer for one year) and need only a simple warm up 2' in the microwave without losing nutritional value, the aroma and quality since it is not subject to temperature changes. We do not use dyes or preservatives in any of our products.

Rissoto with saffron and snails.

Snails with barley pasta.

Moussaka with snails.

Potato stew with snails and herbs.

Chickpeas with snails.

Green (Cichorium spinosum-wild dandelion greens) with tomato.

Linguine with snail broth.

2. Burgundy Snails

An excellent dish of French gastronomy with stuffed shells of snails with pure quality butter or margarine, garlic, parsley and a little nutmeg.

 

Packaged by 6 or 12 snails in special plastic container using the cook & freeze method and maintained in the freezer at -18° for approximately one year. All you need is to heat the container for 3' in the microwave and they are ready hot for consumption.

100gr muscle mass of fresh product (about 10 snails) cover more than 60%
of the required daily need in calcium and iron 1/4 for each person.

NUTRITIONAL VALUE

Also, we observe that the amount of protein is about 14% and demonstrates the significant content of snails in protein such as: leucine, isoleucine, phenylalanine, valine, lysine and treonine.

 

The values ​​of the fatty acids are divided into three types: the saturated fatty acids (animal fats), unsaturated acids (such as oleic acid contained in olive oil) and polyunsaturated (found in vegetable oils and fish). We observe that the snail contains low amount of saturated and unsaturated fatty acids, while having a high content of polyunsaturated fatty acids.

The second table shows the minerals, where the large amount of calcium is observed, phosphorus, iron and copper.

 

In summary, the study results show that the snail is a light and easily digestible food, high in nutritional value.
The high content of polyunsaturated fatty acids makes the snail very important to the diet and therefore appeals to all categories of consumers.

 

Also, this study demonstrates that 100gr muscle mass of fresh product (about 10 snails) cover more than 60% of the required daily need in calcium and iron ¼ for each person.
